Kitchen Sink Meatloaf

Last night I made what I like to call Kitchen Sink Meatloaf. This is because everything but the kitchen sink is in it. Does that make it a difficult recipe? Not at all, in fact, this is one of those simple go-to’s for any night of the week and is great for unexpected guest because you are guaranteed to have plenty to go around. Below is how I made it, except for the amounts of meat, breadcrumbs, and eggs you can change it to what ever you are trying to get your family to eat in the moment. I encourage you to use this recipe to sneak things in to your kids (and, husbands) diets. Such as, onion, carrots, zucchini, squash…or any variety of veggies.

1 1/2 pounds lean ground beef

2 eggs

1 c. breadcrumbs

1 packet Meatloaf seasoning

1 zucchini, grated

1/2 sweet onion, grated

1 red pepper, chopped finely

Squish it all together well. Bake at 400 for about an hour. You can use a loaf pan for the traditional shaped meat loaf. I used a 9×9 (brownie pan) to make mine and cut into 9’s. Whatever works for you.
