Dinner at The Hampton’s

This weekend’s special recipe is Peanut Butter Oat Cookies, courtesy of 500 Best Cookies, Bars & Squares. I made this one for playgroup and they were a big hit, with the kids and mom’s alike. I am a big believer in making healthy, tasty snacks for the kids. I put oats in almost every baked good I make-peanut butter takes it to the next level.

Peanut Butter Oat Cookies

Mix together 1 c. flour, 1/2 t. baking soda, 1/2 t. baking powder, 1 1/2 c. quick cooking oats and 1/2 t. salt. In a separate bowl, beat together 1/2 c. softened butter, 1/2 c. granulated sugar and 1 c. brown sugar. Beat in one egg. Add 6 T. crunchy peanut butter (use reduced fat), 2 T. water and 1/2 t. vanilla. Beat until well incorporated. Add dry ingredients and mix thoroughly.

Bake on a greased cookie sheet at 350 for 13-15 minutes. Immediately remove to cool on a wire rack.

Meatloaf Sammies & Potato Wedges

Tonight was a hit! I have a love/hate relationship with left-overs. They always sound good in theory, but when the time comes to warm them up and do something, they just seem lifeless. Often left overs sit in our frig until they get toss a week or so later. I hate seeing food sit in the frig, but isn’t it worse to see it go in the trash?

If you have noticed a trend in the meals I share with you, there is a certain amount of customizing that can be done, and this one is no different. I believe that is part of the love and draw of food, anything goes for each personality and taste. When you have many of those under the same roof, you need options-and, I mean other than a taco bar every night of the week. One can only eat so many refried beans-well, correction, one only wants their husband to eat so many refried beans.

Speaking of husbands, in my house we like things spicy (as you will see below) but my husband more so than the rest of us (the man eats Habanero’s like their pickles), so I put the heat at medium and he adds to it.

So, onto the meal. Sidenote: This one is not veggie heavy, so through together a simple salad to cover all your nutritional bases.

Potato Wedges:

Wash and slice into eight wedges enough potatos for your family. I would say 3/4 of a large potato per person. Place them in a pan and cover with cold water. Throw a little salt in and place on a burner. Turn onto high. Bring to a boil, then reduce heat to medium and simmer five minutes. Drain and toss with olive oil and desired spices.

For the spices I used: garlic powder, onion powder, spicy pepper blend, chili powder, cumin, salt, fresh cracked pepper and paprika. Use whatever your family likes!

Arrange in a single layer on a baking sheet and bake at 450 for 20 minutes.

*Sidenote: For a yummy, healthier wedge use sweet potatoes and omit the par boiling.

While, these are cooking…

Slice the left over meatloaf into the number of sandwiches you need. Arrange buns on a baking sheet (I used cracked wheat buns) and place a slice of meatloaf on the bottom half of each bun. Place a slice of your favorite cheese on the meatloaf (I used Provolone). Leave the top half empty, we are just putting it in to brown while the meatloaf warms and the cheese melts.

When the potato wedges are done, take them out and switch the oven to broil. Place the baking sheet with the sammies under the broiler for about 10 minutes. Keep an eye on it, I took the top portion of the buns out before the rest because they were getting brown faster than the cheese was melting.

While, the sammies are broiling mix up some spicy mayo. I used miracle whip and a ton of Thai chili sauce, again, use whatever you family will like. When the sammies are done, serve it up!!!

It’s sure to be a favorite with everyone at the table. If I can feed my picky husband with it, then it’s got to be good. Thanks for having Dinner at The Hampton’s and see you around the table next time!
