This is an incredibly healthy and kid-friendly meal. My toddler loved it, the jury is still out on my husband’s reaction. I thought it was great. This is a 20-30 minute meal, start to finish.
What You Need
- 1 pd. ground turkey
- Roasted red peppers (roast your own or use the jarred variety)
- Shredded Mozzerella cheese
- 2 sweet potatoes, peeled and wedged
- Spices
- Olive oil
- Cracked Wheat Buns (or whatever your family likes)
Preheat oven to 450 and spray a baking sheet with cooking spray. Peel and cut two sweet potatoes into wedges. Toss in a bowl with oil and coat with a mixture of your favorite spices. I used cumin, onion powder, garlic powder, chili powder, salt and pepper. Basically, the same stuff as last night with the potato wedges. Spread the sweet potato wedges out in a single layer on the baking sheet and throw in the over for 15-20 minutes.
Meanwhile….
Put a little oil in a fry pan and turn on medium. Make eight patties out of the pound of ground turkey. Four of the patties will be the bottom and the other four will create the tops. You will end up with four patties. Place a tablespoon of chopped roasted red peppers (I made my own; see instructions below), then one tablespoon of shredded mozzerella cheese. Then take another pattie and place on top of the filling and smoosh them together sealing the edges, so the filling doesn’t come out. Repeat this process and complete the other three patties. Place in your fry pan and cook for 5-7 minutes on each side, or until cooked through.
Toast some cracked wheat buns and top with your favorite sauce or mayo.
Roasted Red Peppers
Place desired number of red peppers on a oiled baking sheet and oil the peppers. Roast for an hour or so at 400 degrees. Allow them to cool completely before handling. Once cooled, wipe the blackened skin off with a damp paper towel and squeeze all the seeds and membrane out. Chop and store in olive oil.
