Last night, I made crunchy chicken using the same Rice Kripies coating, only on chicken legs and baked in the oven. BIG hit, even with my husband who is not a huge fan of chicken. But, before I get to that, I apoligize for the late posting. I had to venture out yesterday evening to purchase a new printer after my toddler attempted to “fix” it himself. Bad news for the printer, good news for me! I got to upgrade and now have faxing powers.
On to the meal, as I already mentioned, I did a crunchy chicken leg. I always pull the skin off the legs, this makes them way healthier and keeps the crunch on the chicken. Dredge in seasoned flour, then egg, then ground Rice Krispies. Place on a greased baking sheet and spray the tops with cooking spray. Bake at 350° for about 50 minutes, or until the chicken is cook through. I threw together a boxed pasta and some corn on the cob to go with it, but what ever sides you like will work, this is chicken after all-anything goes. Definitely a kid-friendly meal!
For tonight, so far I know I am doing salmon, jasmine rice and sweet peas, but not sure on the details….come back to see what I decide. And, as always thanks for having Dinner at The Hampton’s and see you around the table next time.
