We are big seafood lover’s in my house, so we have Salmon, shrimp and crab various times throughout the month. On of my favorite and one of the simplest ways to cook is packet cooking. I use foil, but parchment paper is can also be used.
Tonight, I chopped a zucchini and opened a can of peas. I laid a pile out on three different pieces of foil (my husband, myself and my toddler-this is a great way to customize the veggies). Topped the veggie pile with a piece of salmon (also cut to fit the person), then drizzled a little olive oil, salt and freshly cracked pepper on top. Seal them up, place on a baking sheet and roast in a preheated (400°) for about 30 minutes.
While, the fish is cooking I cooked up some Jasmine rice on top of the stove. Follow packet instructions. Mine were 2 1/2 c. water with 1 c. rice. Bring to a boil, then simmer 25 minutes.
When the fish comes out open the packets, carefully, top with a little fresh lemon juice and your favorite fresh herb and serve over rice.
