Quick & Easy Gourmet Pizza

I had to share my lunch creation with you today. I know, this is supposed to be about dinner, but a good lunch now and then never hurt anyone, right?

I make little pizza’s a lot for lunch, mostly because my husband loves them and they only take 20 minutes, so they are easy to have waiting for him when he comes home from work on his lunch break, but he is off on Monday’s. I thought it would be a quick way to feed everyone before nap time, which is happening as I type…ah!

Anyway, to the pizza! I use extra crispy english muffins, because…well…they are extra crispy, yum! Below are two different ways to make the little pizzas. Enjoy!

Quick & Easy Pepperoni Pizza

1 english muffin per person/halved

pizza sauce, jarred

pepperoni slices

shredded cheese

Lay the english muffins out on the baking sheet, inside up. Spoon a little jarred pizza sauce on them and spread around evenly. Sprinkle a little of your favorite shredded cheese on top and add a few pepperoni slices. Bake in a preheated (350°) oven and bake for 20 minutes.

Quick & Easy Gourment Pizza

1 english muffin per person, halved

pesto

feta

mushrooms

extra virgin olive oil

Same process, different ingredients. Lay english muffins out on a baking sheet. Spoon a little pesto on to each one and smooth out evenly. Top with a little crumbled feta cheese, I used the Athenos Feta chunck with basil and tomato. Sprinkle on your favorite fresh mushrooms, chopped, and bake in a preheated (350°) oven for 20 minutes. These can also be great for entertaining, just use mini-bagels instead!
