Part of our plan to go organic and more sustainable is by purchasing pork and beef from friends of ours who raised their own livestock. We are a small family so we order a half of each. The beef is in the fall, but our pork has arrived! We got 90 pounds of pork, in various cuts, packaged beautifully from a happy, healthy, organically raised pig for only $250…which is a years worth of pork for my little family. I feel good about our decision and am excited to try new pork recipes.
Stay tuned for new pork recipes and as some of you may have noticed, I don’t talk about using a grill…we do not currently have one, though will be investing in one soon. The summer will be full of grill seasoning, sear marks and other tasty delights from the backyard.

Tonight I had a craving for a good fish taco, which I have never actually made at home. So, I made it up in my head and put it together on the plate…it was delicious.
What You Need:
- Mahi Mahi (small filet per person)
- can of black beans, drained and rinsed
- one avocado, chopped
- cooking spray
- salt
- pepper
- Jamiacan jerk seasoning
- can of black olives
- mango salsa
- provolone cheese
- whole wheat tortillas
What You Do:
Spray a baking dish with cooking spray and placed thaw Mahi Mahi fillets in pan. Spray the tops of the fish with cooking spray and sprinkle with salt, pepper, and jerk seasoning. Toss in the oven to bake at 375° for about 15-20 minutes.
Wrap some whole wheat tortillas in foil and set on the stove for later. Meanwhile, chop the olives, avocado and set out the other ingredients. I do this like any other taco night, where people can build them to suit.
The fish is cooked through when it flakes easily. Turn the oven off and throw the foiled tortillas in to warm for a couple of minutes. Layer all the ingredients on the tortillas and enjoy!
As usual, thanks for having Dinner at The Hampton’s and see you around the table next time!

So, last night I decided against the shrimp and rice and instead went for, what I call, Open Kitchen Night. This is where my husband can make what he wants when he is hungry and I make sure to feed the toddler something, then I eat when I am ready. This is most often done on nights when I am either exhausted or right after we have been grocery shopping. I also notice I tend to do this more on the my husband’s days off because our schedule tends to get a little misaligned.
I will be making dinner tonight though, tune in for Mahi Mahi Fish Tacos!
