Mahi Mahi Fish Tacos

Tonight I had a craving for a good fish taco, which I have never actually made at home. So, I made it up in my head and put it together on the plate…it was delicious.

What You Need:

  • Mahi Mahi (small filet per person)
  • can of black beans, drained and rinsed
  • one avocado, chopped
  • cooking spray
  • salt
  • pepper
  • Jamiacan jerk seasoning
  • can of black olives
  • mango salsa
  • provolone cheese
  • whole wheat tortillas

What You Do:

Spray a baking dish with cooking spray and placed thaw Mahi Mahi fillets in pan. Spray the tops of the fish with cooking spray and sprinkle with salt, pepper, and jerk seasoning. Toss in the oven to bake at 375° for about 15-20 minutes.

Wrap some whole wheat tortillas in foil and set on the stove for later. Meanwhile, chop the olives, avocado and set out the other ingredients. I do this like any other taco night, where people can build them to suit.

The fish is cooked through when it flakes easily. Turn the oven off and throw the foiled tortillas in to warm for a couple of minutes. Layer all the ingredients on the tortillas and enjoy!
