Dinner at The Hampton’s

Seafood Ravioli

So, this one didn’t turn out so good, but I am going to post what I made. I you like the idea, you can play around with it a little and figure out what works for you.

What You Need:

  • Canned Crab Meat
  • Pre-Cooked Shrimp, chopped
  • Salt
  • Pepper
  • Garlic Powder
  • Onion Powder
  • Chipotle Pepper Powder
  • Ground Ginger
  • Paprika
  • Wonton Wrappers
  • Butter & Olive Oil
  • Garlic, chopped
  • Scallions, chopped

What You Do:

Mix together the first nine ingredients. Set out some of the wonton wrappers and place about 1/2 T. of the filling in the center of each one. Do this until the filling is gone. Use your fingers or a pastry brush to wet the wonton around the filling. Place another wonton wrapper over the bottom one. Carefully, push all the air out and seal it around the filling. Do this for all of them. Use a biscuit cutter just larger than the filling and cut all of them. This will help form a tighter seal.

Start a pot of salter water to boil.

Place a saute pan on medium heat with a little butter and oil. Once, the butter melts, add the chopped garlic. Stir frequently to keep the garlic from burning.

When the water comes to a boil, drop a few of the ravioli’s in. You will have to cook the pasta in batches. As the finish cooking, use a slotted spoon to transfer them from the boiling water to the saute pan. The pasta will not take long to cook, keep an eye on them.

Top with the chopped scallion (and I tossed on some sunflower seeds for crunch, and squeeze a lemon over it for freshness.)

Shrimp Scampi w/ Zucchini Over Jasmine Rice

Ok, so it’s not the healthiest dinner in my arsenal, the shrimp scampi, after all, does involve a TON of butter, but you have to live a little…and, it was delicious. Now, this is a semi-homemade specialty!

What You Need:

  • Sea Pak Shrimp Scampi
  • One large zucchini, chopped
  • Jasmine Rice
  • Black Beans (I had some left-over from the other night)
  • Scallions, one or two chopped

What You Do:

Cook the rice according to the package. Meanwhile, cook the shrimp according to the package, throwing the zucchini in after five minutes. Allow the both to finish. Serve the shrimp scampi and zucchini in the butter sauce over the rice and black beans, top with chopped scallions. How easy and delicious was that!
