This weekend’s sweet treat is by far my favorite thus far. Hope you enjoy too!

Lemon Yogurt Cookies

  • 2 1/2 c. + 2 T. flour
  • 1 t. baking powder
  • 1/2 t. baking soda
  • 1 t. salt
  • 2 eggs
  • 1 1/2 c. granulate sugar
  • 1/3 c. vegetable oil
  • 1/2 c. low-fat lemon yogurt
  • 1/2 t. lemon zest
  • 1 t. lemon juice

Pre-heat oven to 350°. Lightly grease a cookie sheet and set aside. In a medium bowl, mix together dry indgrients. In a large bowl, beat together the wet ingredients. Add the dry to the wet and mix well to incorporate completely. Drop by rounded teaspoons onto the cookie sheet (TIP: Coat the spoon with non-stick cooking spray for the batter to slide right off) and bake for 11-13 minutes, or until just starting to brown. Cool on the sheet two minutes, then transfer to a wire rack. Ice with Lemon Butter Icing (recipe below).

Lemon Butter Icing

  • 1 1/2 c, confectioners sugar
  • 2 T. butter, softened
  • 1 T. milk
  • 1/2 t. lemon zest
  • 1 t. lemon juice

Mix together until smooth and spreadable.

Stampede Chili

Tonight, I threw together chili, which I LOVE! I made it a little different this time. I used stew meat instead of hamburger.

What You Need:

  • Stew Meat
  • Marinade
  • 2 cans of chili beans
  • 1 large can diced tomatoes
  • Toppings (shredded cheese, green onions, sour cream, whatever you like)
  • Pillsbury Cornbread Twists (Yum!)

What You Do:

Marinate the stew meat for a couple of hours. Heat a Dutch Oven on medium heat and throw the meast in. Brown on all sides. Add the beans with liquid and the can of tomatoes, with or without liquid-depends on your preference. Let cook for an hour or so. Serve with toppings and cornbread twists.

Lunch is Served

I don’t normally blog about lunch, but I made a yummy one today, so I have to share. It started out as just turkey sandwich, until I opened the frig and saw a piece of left over KFC chicken. I know…I know, but it’s so good.

Anyway, I picked the chicken (and, yes I threw away the skin, though my husband would have passed out if he saw that), I added a little chopped turkey, because it wasn’t much. Next, some diced red onion (I buy mine pre-chopped at the store) and a half a chopped avocado. About a tablespoon or two of Miracle Whip and a little salt and pepper. I had mine on a toasted cracked wheat bun with a couple of thin slices of mozzerella. Mmmm!
