This was pretty good. Not my favorite thing ever, not sure what my hubby thought.
Southwestern Noodle Bowl
What You Need:
- 1 1/2 lb. flank steak, cut into bite size strips
- ground cumin
- salt
- pepper
- olive oil
- garlic, minced
- 14 oz. lower-sodium beef broth
- 14 oz. lower-sodium chicken broth
- 6 oz. dried angel hair pasta
- 2 med. sweet peppers, chopped
- 6 scallions, chopped
- 1/4 c. fresh oregano
- 1/2 c. salsa
What You Do:
Season the steak with salt, pepper and cumin and cook in olive oil with garlic until down. Add broth and bring to a boil. Add pasta, peppers, onions and boil 2-3 minutes, or until pasta is tender. Stir in salsa and oregano and heat through. Serve in bowls, by ladling in and twirling pasta into nests with a fork. Garnish with additional salsa. I also served buttered wheat bread on the side.
