Southwestern Noodle Bowl

This was pretty good. Not my favorite thing ever, not sure what my hubby thought.

Southwestern Noodle Bowl

What You Need:

  • 1 1/2 lb. flank steak, cut into bite size strips
  • ground cumin
  • salt
  • pepper
  • olive oil
  • garlic, minced
  • 14 oz. lower-sodium beef broth
  • 14 oz. lower-sodium chicken broth
  • 6 oz. dried angel hair pasta
  • 2 med. sweet peppers, chopped
  • 6 scallions, chopped
  • 1/4 c. fresh oregano
  • 1/2 c. salsa

What You Do:

Season the steak with salt, pepper and cumin and cook in olive oil with garlic until down. Add broth and bring to a boil. Add pasta, peppers, onions and boil 2-3 minutes, or until pasta is tender. Stir in salsa and oregano and heat through. Serve in bowls, by ladling in and twirling pasta into nests with a fork. Garnish with additional salsa. I also served buttered wheat bread on the side.
