I am on the committee for our local Relay for Life event and tonight is our second annual Cancer Survivors Dessert Night, where we invite survivors and their caregivers to have a tasty night with desserts, beverages and good company. I am taking honey roasted peanut butter cookies, Chocolate Bliss Bites and Carrot Pineapple Bars.
Chocolate Bliss Bites
What You Need:
- 1/2 c. unsweetened cocoa powder
- pinch of salt
- 1/2 c. sugar, divided
- 3 lrg. egg whites
- 1/8 t. cream of tartar
- 1 t. vanilla extract
- Confectioner’s Sugar
What You Do:
Preheat oven to 300°. Line 2 baking sheets with foil and spray with non-stick spray. In small bowl, sift together cocoa, salt, and 1/4 c. sugar. In large bowl, beat egg whites and cream of tartar until soft peaks form. Add 1/4 c. sugar, one tablespoon at a time, until hard peaks form. Fold in cocoa mixture and add vanilla. Drop by rounded teaspoons onto prepare cookie sheets and bake for 25 minutes for chewy, or 40 minutes for more crisp ones. Dust cooled cookies with confectioner’s sugar.

Pineapple Carrot Bars
What You Need:
- 1/2 c. flour
- 1/2 c. whole wheat flour
- 1 T. ground cinnamon
- 1 t. baking soda
- 1 t. baking powder
- 1/2 c. packed brown sugar
- 2 T. vegetable oil
- 1 egg, beaten
- 1 t. vanilla
- 1/4 c. milk
- 1 c. finely grated carrots
- 1/2 c. raisins
- 2/3 c. crushed pineappled, drained
What You Do:
Preheat oven to 350° and grease a 13×9″ cake pan. In large bowl, mix together the first five ingredients. Add sugar, oil, egg, vanilla and milk and mix until just blended. Stir in carrots, raisins and pineapple. Spread evenly in prepare pan and bake 25 minutes. Cool pan on wire rack, then cut into bars. Store covered in the refrigerator.
