Rainy Day Dinner

Today is a raining day, which is not extraordinary in Oregon, but for June we are feeling a little “under the weather”, so I decided a good, comforting, rainy day dinner was in order. In the meat department of my grocery store, there are whole chickens that are pre-marinated. I picked up a lemon pepper one. Then just place it in the middle of a baking dish and surround it with some seasoned and oiled potatopes, veggies and whatever else you would like. Put it in the oven and forget about it for about an hour and a half, then dinner is served. All in one pot and all delicious. Plus, the left-overs make a mean chicken sandwich the next day!

BLD!

Breakfast, lunch or dinner! This is one of my favorite foods choices and really any food can be a BLD dish. Monte Cristo’s are one of my favorite sandwiches and they are super quick and easy. Maybe, not the healthiest sandwich or dinner on the block, but certainly one of the tastiest.

As with many of my dishes, please feel free to trade ingredients for your favorites of the same type.

Monte Cristo’s

What You Need:

  • Sour Dough Bread
  • Roast Turkey, sliced
  • Swiss Cheese, sliced
  • Black Forest Ham, sliced
  • Pesto or grainy mustard
  • Egg
  • Milk
  • Butter

What You Do:

Mix the egg and a little milk in a bowl like you would for french toast. Layer ham, swiss, turkey, pesto on a slice of bread. Top with another slice. This would be the sandwich part. :) Next, dip the sandwich in the egg and milk mixture like you would if you were making french toast and fry both sides in the butter over medium heat. It is a delicious mixture of your favorite sandwich ingredients and french toast.
