Tonight I took it back to the basics. I simply put some chicken in a baking dish, slathered on some butter, sprinkled with salt, pepper, rosemary leaves and lemon zest and baked until done. Meanwhile, on top of the stove, I made a box pasta and sauted some zucchini. Then, I threw in some crusty bread basted with butter and sprinkled with garlic powder and chipoltle chili powder. That was it! Simple, classic, easy and best of all…yummy!

I was going to make spagetti and meatballs last night, but when the time came I was too tired to roll meatballs, so I just made a really chunky meat sauce. This isn’t even a recipe, just use your favorite things. I used pork sausage, tomato sauce, mushrooms, olives and oregano over whole grain angel hair with texas toast. Easy, fun and yummy!
