Happy Father’s Day! It hasn’t been too bad in our house. The kids and I (well, I…) made eggs benedict for a special Daddy’s Day breakfast. I made some bacon to go with it. Traditional Eggs Benedict has canadian bacon and a poached egg. I took the easy way. And, yes, I used Hollandaise from a mix.
I fried some ham, toasted some crusty sour dough bread, fried some eggs and put it all together. Yum!

Last night, was simple and delicious. It was good diner food at home. I made some super lean hamburgers by simply cooking them in a pan over medium heat until both sides are brown, then letting them finish in a 350°. Mine took about 10 minutes, it depends on how big the burgers are. Mine were 1/4 pounders. If you are using super lean meat, put an egg and some breadcrumbs in to firm it up. Top with your favorite flavors. I also put Worchestershire and Teriaki Sauce in my burgers, so I went with an Asian flair. I topped them with cheese before they went in the oven, then mixed up a sweet-spicy mayo, by adding Thai Chili Sauce and honey into plain mayo.
I made potato wedges to go with them. I drizzle a little olive oil on my potatoes and toss them in a spice mix of cumin, chili powder, garlic powder, onion powder, salt and pepper. Bake them for about 30 minutes, tossing once. I mixed some sweet chili sauce into sour cream for a dipping sauce for the potatoes.
